Creamy Potato + Chicken Soup
Ingredients (Organic Veggies Recommended):
3-5 Medium Peeled White/Red/or Sweet Potatoes
1 Cup Chopped Kale or Spinach
1 Cup Chopped Carrots
1 Cup Chopped Onion
1 Cup Chopped Celery
2 Peeled Garlic Cloves
½ Strip Kombu
1 Bay Leaf
1 tsp. Sea Salt
½ tsp. Pepper
1 tsp. Seasoning (I used a Garlic and Herb Blend)
½ Stick Grass-fed Butter
2T. Avocado Oil
1 Carton Bone Broth or Organic Chicken Broth
2 Cups Cooked Organic Chicken or Rotisserie Chicken (to save time)
Steps:
Peel, cut, and boil potatoes in water for 20 min. set aside.
Chop all of the veggies EXCEPT garlic and Kombu, sauté’ in avocado oil for 7-8min.
In a VitaMix or blender puree potatoes, 2 peeled garlic cloves, ½ stick grass-fed butter, 1tsp. Salt and pepper, seasoning, and ½ carton of chicken broth.
Add more or less broth for desired consistency.
Add Veggies, Chopped Chicken, ½ Strip of Kombu and Bay Leaf to the Pureed mixture and simmer on low for 20-30min.
