Creamy Potato + Chicken Soup

Ingredients (Organic Veggies Recommended):

  • 3-5 Medium Peeled White/Red/or Sweet Potatoes

  • 1 Cup Chopped Kale or Spinach

  • 1 Cup Chopped Carrots

  • 1 Cup Chopped Onion

  • 1 Cup Chopped Celery

  • 2 Peeled Garlic Cloves

  • ½ Strip Kombu

  • 1 Bay Leaf

  • 1 tsp. Sea Salt

  • ½ tsp. Pepper

  • 1 tsp. Seasoning (I used a Garlic and Herb Blend)

  • ½ Stick Grass-fed Butter

  • 2T. Avocado Oil

  • 1 Carton Bone Broth or Organic Chicken Broth

  • 2 Cups Cooked Organic Chicken or Rotisserie Chicken (to save time)

Steps:

  1. Peel, cut, and boil potatoes in water for 20 min. set aside.

  2. Chop all of the veggies EXCEPT garlic and Kombu, sauté’ in avocado oil for 7-8min.

  3. In a VitaMix or blender puree potatoes, 2 peeled garlic cloves, ½ stick grass-fed butter, 1tsp. Salt and pepper, seasoning, and ½ carton of chicken broth.

  4. Add more or less broth for desired consistency.

  5. Add Veggies, Chopped Chicken, ½ Strip of Kombu and Bay Leaf to the Pureed mixture and simmer on low for 20-30min.
